MA! Officina Gastronomica was created to produce handmade bresaola or, as we call it here in Valchiavenna, brisaola.
As time passed, we got a real taste for it and so we introduced the production of cured meats made with goat, venison and rare black Alpine pig, delicatessen products and jams. MA! Officina Gastronomica is a thinking laboratory in which we combine age old methods with the latest research and the promotion of products, especially local ones: our work is constantly evolving, respecting the times and rhythms of nature.
We say no to compromise, to the use of chemical preservatives, to trends, to forcing. Our products reflect our idea of cooking: we like to go back to our roots and also experiment with new proposals to enhance already great products.
That's why we work the meat of the black Alpine pig, bred in our valleys, we make jam with wild blueberries from the woods around Madesimo, we produce bresaola without preservatives and we are part of the Slowfood Association for the protection of the Violino di Capra della Valchiavenna.FIND OUT MORE
Our laboratory is a place where we create and work, without ever getting bored. Along with our imagination, the ingredients that we select are our main source of inspiration; we like to research and experiment. Here we spend whole days, and sometimes nights, taking care of our cured meats and cooking.

You can visit our shop in Madesimo and buy your favourite products. Availability will vary depending on the time and season because we work with natural rhythms and methods; you won't find everything every day but you will always be sure to find something unique!
